Baby Sweetcorn

baby sweetcorn Baby sweetcorn has a very distinct texture and it is this characteristic that largely influences me to include it in a dish, as it can tolerate cooking and maintain it’s crunch.

I always use it in my Thai green curry, but it works well in stir frys too. I have noticed lately, that some of the larger supermarkets are selling stir fry packs that include baby sweetcorn which is yellow, a red chilli, and perhaps mange-tout or other green vegetable, to make your stir frys look colourful and appealing. These packs can be more economical than buying these vegetables separately if you don't need a large quantity.

Simply trim off any unwanted stalk, wash, and cut to the required sizes.
