Basics for the novice cook

Spring Onions

spring onionsI use spring onions in my stir frys, not just for the flavour but for colour too. They also elevate a potato salad.

To prepare you should always wash them first. Trim off the root, and then cut them to the required length:

For stir frys I would cut them into lengths of 2 - 3 cm and add them to the wok towards the end of frying.

I cut them finely (perhaps 3 - 5 mm) and use them raw in salads.
