Mushrooms

MushroomsMushrooms come in all shapes and sizes, and not only do they make good sides, but are versatile enough to star in vegetarian dishes too.

Mushrooms should first be wiped clean with kitchen paper. Trim off any unwanted stalk length and then cut them with a very sharp knife, if and as required.

If you are shallow frying mushrooms you will notice how they will absorb all the oil in the pan. Don't worry - after a couple of minutes they will sweat it out again, so don't be tempted to add more oil.
