Basics for the novice cook

Cucumber

cucumberCucumber brings a freshness to salads, salmon, and in Thailand we add it to fried rice dishes too.

I find the skin can sometimes be a bit leathery and so often shave some of it off with a standard vegetable peeler before cutting it.

Cucumber can also be used in stir fries, especially with a sweet and sour sauce, in which case it’s more practical to cut it into sections of say 3cm and then to cut each section lengthways into 6 pieces. The squidgy centre and the seeds can be discarded.
